No Bake Sweet Potato Pie

No Bake Sweet Potato Pie

1 large can of sweet potatoes
1 sm tub of Cool Whip
1/2 individual serving of applesauce
1 tsp pumpkin pie spice
1 4 oz pkg of instant vanilla pudding
1/3 c. chopped pecans
1-1/2 tblsp butter melted
1 tbls brown sugar
pie crust

Preheat oven to 400 degrees
Mix melted butter, pecans, brown sugar and put in pie crust before cooking.
Cook pie crust according to directions on pkg or your own recipe.

Drain sweet potatoes, whip with electric mixer until fairly smooth, mix in pudding, cool whip, spice, and half a serving of applesauce. Put in refrigerator until pie crust has cooled. When cool put in crust and serve.
Serves 6

Shock of all shocks, my picky son loves this recipe!

These are 2 of the 3 afghans I made for our United Way Campaign last year. Different people donate items and then we have a not so silent, silent auction. The one with the trees I got out of one of Vanna White's pattern books. It is crocheted using 2 strands of yarn.

Very quick and easy.

Another afghan for the Fellowship Center. My DH loves this one. I may have to make him one like it.

afghan and shawl




This shawl is partially my own design, it is a shell crochet with a collar and pockets. The pockets are mine I decided to make them because I made it too long. The rest of the shawl I got from a knitted picture.






The lap afghan is from an unfinished full size afghan I had started years ago. I took it apart because I didn't have the yarn to finish it. I make lap afghans throughout the year to give to the seniors at a fellowship center in my county for Christmas gifts.
